Add garlic
Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to brown it.

Simmer
Bring the soup to a gentle boil, then reduce heat to maintain a low simmer. Partially cover and simmer for 20–25 minutes to meld flavors and soften the vegetables fully.

Finish and blend (optional)
Remove the bay leaf. For a smooth soup, use an immersion blender to purée the soup directly in the pot until you reach the desired texture. Alternatively, transfer batches to a blender and purée, then return to the pot. If you prefer a chunkier soup, leave as-is and adjust seasoning.

Adjust seasoning and enrich
Stir in 1 tbs heavy cream if using and taste. Adjust salt and pepper as needed. If too thick, add up to 1/2 cup additional stock or water to reach desired consistency.

Prep garlic butter
In a small bowl, combine 4 tbs softened unsalted butter, 2 grated garlic cloves, 1 tbs chopped parsley, 1 tsp salt, and 2 tbs grated parmesan (if using). Mix until evenly combined.

Toast
Place the prepared slices on a baking sheet and broil on high (or bake at 425°F / 220°C) until edges are golden and buttered tops are bubbly, about 2–4 minutes under a broiler or 6–8 minutes at 425°F. Watch closely to prevent burning.
