Prepare chicken
Pat chicken breasts dry with paper towels. Slice each breast into 1/2-inch thick strips (about 8–10 strips total). Season the strips evenly with 1 tsp salt, 1 tsp black pepper, and 1/2 tsp garlic powder.
Set up breading station
Place the flour in a shallow bowl. In a second bowl, beat the 2 large eggs until smooth. Place the panko breadcrumbs in a third shallow bowl.
Bread the chicken
Working in batches, dredge each chicken strip in flour, shaking off excess, dip into beaten egg, then press into panko until well coated. Place breaded strips on a plate and let rest 5 minutes so the coating adheres.
Fry the chicken
Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F / oil should sizzle when a breadcrumb is tested). Add breaded strips in a single layer (do not crowd) and fry 2–3 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a paper towel–lined tray to drain. Repeat with remaining strips, adding a little more oil if needed.

Prepare sauce
In a small bowl, whisk together 1/2 cup sweet Thai chili sauce, 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1 teaspoon honey, and 1/2 teaspoon sesame oil until combined. Taste and adjust: add more honey for sweetness, or more rice vinegar for tang.
Prepare vegetables and toppings
Peel and julienne or grate the 1 medium carrot into thin matchsticks. Thinly slice the 3 green onions on the bias, separating white and green parts. Toast 1 tablespoon sesame seeds in a dry skillet over medium heat, shaking frequently, until fragrant and lightly golden (30–60 seconds). If using cilantro, chop finely. Have 1 cup crunchy Asian fried noodles ready from the package.
Toss chicken with sauce
Place the drained fried chicken strips in a large bowl. Pour about three-quarters of the prepared Thai chili sauce over the chicken and gently toss to coat each piece evenly. Reserve the remaining sauce for serving.
Assemble toppings
Add the crunchy Asian noodles, julienned carrots, and the white parts of the green onions to the coated chicken and gently toss to distribute. Sprinkle with the toasted sesame seeds, chopped cilantro (if using), and the green parts of the green onions.
Serving
Transfer the tossed Thai Bites to a serving platter. Garnish with lime wedges and serve immediately with the reserved sweet Thai chili sauce for dipping. These are best eaten hot and crunchy.
