    Preheat and prepare

    Preheat your oven to 500°F (260°C) with a pizza stone or heavy baking sheet inside for at least 30 minutes. Lightly dust a work surface with the all-purpose flour. Stretch or roll the pizza dough into a 12-inch round, keeping a slightly thicker rim for the crust.

    Brush the outer 1/2-inch of the dough with 1 tablespoon olive oil to encourage browning and set aside on a piece of parchment for transfer to the oven.

Sweet Thai Honey Garlic Sauce

    Make the sauce

    In a small saucepan over medium-low heat combine 3 tbs honey, 1.5 tbs soy sauce, 1 tbs rice vinegar, 2 tbs water, 2 tsp minced garlic, 1/2 tsp grated ginger (if using) and 1/4 tsp chili flakes (optional). Stir until combined and gently simmer for 2 minutes.

    Whisk 1/2 tsp cornstarch with 1 tsp cold water to make a slurry, then add to the simmering sauce. Cook another 30–60 seconds until sauce slightly thickens. Remove from heat and let cool slightly. Taste and adjust sweetness or acidity as desired.

    Reserve 1 to 1.5 tablespoons of this sauce to drizzle after baking; use the remaining sauce as the pizza base (spread thinly over dough).

Cheeses

    Assemble cheeses

    Evenly distribute the shredded pizza mozzarella over the sauce-covered dough, leaving the oiled crust exposed. Scatter the shredded Gouda and provolone over the mozzarella for a multi-layered melt. Finish with a light sprinkle of the finely grated Parmesan to add sharpness.

    Prepare meats and toppings

    If bacon is not already cooked, pan-fry bacon slices over medium heat until crisp, drain on paper towels and chop into bite-sized pieces. Thinly slice red onion and chop pineapple into 1/2-inch pieces if not prepped.

    Distribute the smoked prosciutto in gentle folds across the cheese so it warms and crisps slightly in the oven. Scatter the cooked chopped bacon, pineapple pieces, and thin red onion slices evenly across the pizza.

    Lightly sprinkle 1 teaspoon toasted sesame seeds over the assembled toppings for nutty flavor and finish.

Baking & Finish

    Bake the pizza

    Using the parchment, transfer the assembled pizza to the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 7–10 minutes, rotating halfway through, until crust is golden and cheese is melted and slightly browned.

    Remove pizza from oven. Immediately drizzle the reserved 1–1.5 tablespoons of Sweet Thai Honey Garlic sauce over the hot pizza in a light zig-zag pattern. Grind 1/4 tsp fresh black pepper over the top.

    If using, garnish with chopped cilantro or thinly sliced green onion. Let rest 2 minutes, slice into 6–8 pieces and serve.
