Dough & preheat

Activate yeast
Preheat your oven to 475°F (245°C). In a small bowl, combine warm water (about 105–115°F / 40–46°C) with the sugar and instant yeast. Stir gently and let sit 3–5 minutes until foamy. If it does not foam, the yeast may be old — use fresh yeast or slightly warmer water and try again.

Make dough
In a medium bowl, whisk together the flour and salt. Add the foamy yeast mixture and 1 tablespoon olive oil. Stir until a rough dough forms, then turn onto a lightly floured surface and knead for 4–6 minutes until smooth and elastic. If dough is sticky, sprinkle up to 1 additional tablespoon flour.

Rest dough
Lightly oil a small bowl with remaining 1 teaspoon cooking oil or spray. Place the dough ball in the bowl, turn to coat, cover with a clean towel or plastic wrap, and let rest at room temperature for 20–30 minutes to relax and puff slightly (this quick rest helps make a tender pint crust).

After resting, transfer the dough to a lightly floured surface. Press and stretch the dough into a round roughly 6–7 inches (pint-sized) and about 1/4 inch thick in the center with a slightly thicker rim. If dough resists, let rest 5 more minutes then continue. Transfer to a baking sheet or pizza stone lined with parchment.

Add sauce and cheese
Spread the pizza sauce evenly over the dough, leaving the outer 1/2 inch for the crust. Sprinkle the shredded pizza mozzarella evenly over the sauce.

Add chosen topping
Select one topping from the Topping section. If using pepperoni, arrange slices evenly over the cheese. If using mushrooms or bell pepper, distribute slices in a single layer. If using cooked sausage, sprinkle crumbled sausage evenly. If using fresh basil, add whole or torn leaves on top of the cheese.

Season
Lightly sprinkle the dried oregano or Italian seasoning and a pinch of cracked black pepper over the assembled pizza.

Bake
Place the pizza in the preheated oven on the middle rack (or slide onto a preheated pizza stone if using). Bake for 8–12 minutes until the crust is golden at the edges and the cheese is bubbly and lightly browned. Baking time will vary with oven and thickness of dough—start checking at 8 minutes.

Rest and serve
Remove the pizza from the oven and let rest 2–3 minutes to set the cheese. If you chose fresh basil, add it now so it stays bright. Slice into 4 small pieces (or 6 for smaller bites) and serve hot.
