1. Boil pasta
Bring a large pot of water to a rolling boil. Add 1 tablespoon kosher salt. Add 12 oz spaghetti and cook until al dente according to package instructions (usually 8–10 minutes). Reserve 1 cup of pasta cooking water, then drain spaghetti and set aside.

2. Season shrimp
Pat shrimp dry with paper towels. Toss with 1 tsp smoked paprika, 1 tsp black pepper and three pinches of kosher salt until evenly coated.
3. Sauté shrimp
In a large wide skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter. When butter foams, add shrimp in a single layer (work in batches if needed). Cook 1.5–2 minutes per side until pink and just opaque. Add 3 minced garlic cloves in the last 30 seconds and toss briefly. Remove shrimp to a plate and set aside, leaving any browned bits and oil in the skillet.
Alfredo sauce
4. Cook garlic and deglaze
Reduce heat to medium. Add 4 tablespoons butter to the same skillet. When melted, add 2 minced garlic cloves and cook 30–45 seconds until fragrant but not brown. Pour in 1 cup dry white wine to deglaze, scraping up browned bits. Simmer until reduced by about half, 3–5 minutes.
5. Finish sauce
Lower heat to medium-low and stir in 1 cup heavy cream and 2 tablespoons softened cream cheese (if using). Warm gently until just beginning to simmer, about 2–3 minutes. Gradually whisk in 1.5 cups freshly grated Parmesan until melted and smooth. Season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. If sauce is too thick, add reserved pasta water 1–2 tablespoons at a time to reach a silky consistency.
Vegetables & combine
6. Wilt spinach and add tomatoes
Stir 4 cups baby spinach into the warm sauce and cook 1–2 minutes until wilted. Add 1 cup halved cherry tomatoes and cook 30–60 seconds just to warm through.
7. Combine pasta and shrimp
Add drained spaghetti to the skillet with the Alfredo sauce. Toss to coat, adding reserved pasta water as needed to loosen the sauce (about 2–4 tablespoons). Gently fold the cooked shrimp back in to warm through for 1 minute.
8. Finish and garnish
Remove skillet from heat. Zest 1 lime over the pasta and toss briefly. Stir in 2 tablespoons chopped fresh parsley. Plate the pasta, sprinkle with 2 tablespoons grated Parmesan for garnish, and add additional black pepper or lime zest to taste.
