Preheat your oven to 500°F (260°C). If using a pizza stone, place it on the lowest rack while preheating. Lightly flour a pizza peel or work surface with the all-purpose flour.

On the floured surface, stretch or roll the pizza dough into a roughly 12-inch circle (about 1/4-inch thick). If the dough resists, let it rest 5–10 minutes and continue. Brush the outer 1/2-inch rim lightly with 1 tablespoon olive oil to promote browning.

Spread 3 tablespoons of the signature pizza sauce evenly over the dough, leaving the oiled rim exposed. Reserve the extra 1 tablespoon of sauce for the finishing drizzle.

Evenly distribute 1.5 cups shredded mozzarella across the sauce-covered dough. Sprinkle 1/2 cup shredded cheddar over the mozzarella for flavour contrast and color.

If your pepperoni is in slices, stack a few and very thinly slice them or shred by cutting into thin strips so pieces are smaller and overlap well. Cook bacon until crisp (pan-fry or bake at 400°F/200°C for 12–15 minutes), then drain on paper towels and chop into bite-sized pieces.

Scatter the shredded pepperoni evenly over the cheese layer so coverage is generous but not piled. Sprinkle the chopped crisp bacon evenly on top of the pepperoni.

Season lightly with cracked black pepper and a pinch of red pepper flakes if desired.
Bake

Transfer the assembled pizza to the preheated stone or to a baking sheet. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is golden and blistered, cheeses are melted and bubbling, and toppings are slightly crisped. Rotate halfway through for even cooking.
Finishing & serve

Remove pizza from the oven and let rest 2 minutes. Warm the reserved 1 tablespoon pizza sauce (10–15 seconds in microwave) or use at room temperature, then drizzle it over the pizza in a thin, even line or zigzag for the signature finish.

Optional: sprinkle 1 tablespoon chopped parsley or basil and 1 tablespoon grated Parmesan over the top. Slice into 8 pieces and serve immediately.
