Burger Patties

    Form patty

    Gently shape the 4-ounce (0.25 lb) portion of ground beef into a patty about 3.5–4 inches wide and roughly 3/4 inch thick. Do not overwork the meat. Make a shallow dimple in the center with your thumb to help the patty cook evenly and resist puffing.

    Season both sides of the patty with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper just before cooking.

    Preheat a grill, griddle, or heavy skillet over medium-high heat until very hot. Lightly oil the cooking surface with about 1 tsp neutral oil (use a paper towel held with tongs to spread oil if using a skillet).

    Place the patty on the hot surface and cook 3–4 minutes on the first side without pressing. Flip and cook 3–4 minutes more for medium (adjust to 2–3 minutes after flip for medium-rare, 5–6 minutes after flip for well-done). Internal temperature target: 160°F (71°C) for well-done; 145°F (63°C) for medium-rare (follow local food-safety guidance).

    Remove the patty to a plate and let rest 3 minutes to redistribute juices.

Signature Cactus Dip

    While the patty cooks or rests, combine 2 tbsp mayonnaise and 1 tbsp plain Greek yogurt in a small bowl.

    Stir in 1 tbsp finely chopped pickled or roasted cactus (nopales), 1 tsp minced cilantro, 1/2 tsp lime juice, 1/4 tsp smoked paprika, 1/4 tsp hot sauce (if using), 1/8 tsp salt and a pinch (1/16 tsp) of black pepper. Taste and adjust seasoning — add more lime or salt as needed.

    Cover and refrigerate until assembly. The dip can be made up to 24 hours ahead; bring to room temperature before serving for easier spreading.

Buns & Assembly

    Split the brioche bun and lightly butter the cut sides with 1 tsp softened butter.

    Toast the buttered cut sides on the hot skillet or grill for 30–60 seconds until golden and slightly crisp. Watch closely to avoid burning.

    Place the bottom bun on a plate. Spread about 1.5 tbsp (or to taste) of the signature cactus dip on the bottom bun.

    Lay 1 leaf of lettuce on the dip, then place the rested patty on top of the lettuce.

    Top the patty with 2 slices of tomato, 3 red onion rings, and 3 dill pickle slices. Spread a thin layer (about 1 tsp) of cactus dip on the top bun and place it on the burger.

    Serve immediately while hot.

Finishing & Tips

    If making multiple burgers, keep finished patties loosely tented with foil for up to 10 minutes. Reheat briefly on the grill if needed before assembling.

    Adjust dip spiciness with more or less hot sauce; if nopales are not available, chopped roasted green chiles or chopped pickles can be used as a substitute for texture and tang.
