Chicken Caesar Salad Recipe

    Prepare and flatten

    Pat chicken breasts dry with paper towels. If breasts are uneven in thickness, butterfly or pound them to an even thickness about 1/2 inch to ensure even cooking.

    Season

    Brush both sides of the chicken with 1 tablespoon olive oil. Season evenly with 1 tsp salt, 1 tsp black pepper and 1 tsp garlic powder. If making Cajun chicken, sprinkle 1 tsp Cajun seasoning over the breasts instead of or in addition to garlic powder.

    Grill or pan-sear

    Preheat a grill or heavy skillet over medium-high heat. When hot, add the chicken and cook without moving for 4-6 minutes per side, until internal temperature reaches 165°F (74°C) and juices run clear. For a grill, oil the grates first. For a skillet, add 1 tsp oil if pan is dry.

    Rest and slice

    Transfer cooked chicken to a cutting board and let rest 5 minutes. Slice the breasts into 1/4-inch thick strips or bite-sized pieces.

Caesar Dressing

    Combine base ingredients

    In a small bowl, whisk together 1 tablespoon mayonnaise, 2 tablespoons Greek yogurt, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 clove minced garlic and 1 teaspoon anchovy paste (if using) until smooth.

    Emulsify and season

    Slowly whisk in 2 tablespoons extra-virgin olive oil until dressing is emulsified and slightly thickened. Season with 1/2 teaspoon freshly ground black pepper and 1/4 teaspoon salt. Taste and adjust acidity or salt as needed (add more lemon or salt).

Salad Assembly

    Prepare lettuce

    Place 3 cups torn romaine lettuce into a large salad bowl. If lettuce is wet after washing, spin or pat dry thoroughly to prevent watery dressing.

    Dress the lettuce

    Add about half of the prepared Caesar dressing to the lettuce and toss gently to coat. Add more dressing a little at a time until lettuce is lightly and evenly coated (reserve some dressing for guests who want extra).

    Add toppings

    Top dressed lettuce with 1 cup croutons, chopped crisp bacon (4 slices), and freshly grated Parmesan (about 1 oz).

    Add chicken and serve

    Arrange sliced warm chicken on top of the salad. Finish with an extra sprinkle of Parmesan and freshly ground black pepper. Serve immediately with lemon wedges on the side for squeezing, and additional dressing if desired.
