Form and season patties
Divide the ground beef into two equal portions (about 8 oz/225 g each). Gently form into patties roughly 3/4 to 1 inch thick and about 4 inches in diameter, handling the meat minimally to avoid compressing it. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking. Season both sides generously with kosher salt and freshly ground black pepper. If using, sprinkle Worcestershire sauce onto each patty and gently pat to incorporate.

Cook patties
Place the patties on the hot grill or in the pan. Cook without moving for 3–4 minutes to form a crust. Flip once using a spatula, and cook the second side for 3–4 minutes for medium doneness (adjust time +/− 1–2 minutes for rarer or more well-done). During the last 1 minute of cooking, place a slice of Canadian cheddar on each patty and cover the grill or pan to melt the cheese (or tent with foil). Remove patties and let rest for 2 minutes.

Prepare buns and condiments
While the patties cook, split the buns and spread butter on the cut sides. Toast the buns face-down on the grill or in a clean skillet for 1–2 minutes until golden and slightly crisp. Mix mayonnaise and mustard together if you prefer a combined spread, or keep condiments separate. Arrange lettuce, tomato slices, onion rings, and pickle slices for assembly.

Assemble cheeseburgers
Spread mayonnaise (and mustard, if mixed) on the bottom bun. Place a lettuce leaf on the mayo, then a cheese-topped beef patty. Add two tomato slices, two onion rings, and three pickle slices on top of the patty. Drizzle ketchup on the top bun (or add to taste). Close the burger with the top bun.
