Preheat your oven to 500°F (260°C) with a pizza stone or baking sheet inside. If using a pizza stone, allow at least 30 minutes for it to heat. Lightly dust a pizza peel or baking sheet with cornmeal or semolina. Stretch or roll the pizza dough to a 12-inch round (about 1/4" thick at the center), leaving a slightly thicker edge for the crust. Brush the outer crust lightly with 1 tbs olive oil.
Buttermilk Ranch Sauce

In a medium bowl whisk together 1 cup mayonnaise, 1 cup buttermilk, and 1/4 cup sour cream until smooth. Stir in 2 tsp chopped parsley, 1 tbsp chopped chives, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp dried dill, 1 tsp lemon juice, 1/2 tsp kosher salt and 1/4 tsp black pepper. Taste and adjust seasoning. Refrigerate at least 15 minutes to allow flavors to meld. Reserve 1/4 cup of the finished ranch in a small bowl for final drizzling; the remainder will be used as the pizza sauce base.

Pat 12 oz diced chicken dry. Toss with 1 tsp olive oil, 2 tbsp Buffalo-style hot sauce, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp kosher salt and 1/4 tsp black pepper until coated. Heat a skillet over medium-high heat. Add the chicken and cook 5–7 minutes, stirring occasionally, until cooked through and lightly browned. If the skillet gets dry, add a splash of water. Remove from heat and set aside. Toss the cooked chicken with an extra 1 tbsp hot sauce if you want it saucier.

Spread about 3/4 to 1 cup of the buttermilk ranch sauce evenly over the stretched dough, leaving a 1/2-inch border for the crust. Sprinkle 1 1/2 to 2 cups shredded mozzarella evenly over the sauce. Distribute the cooked Buffalo chicken in an even layer atop the cheese. Scatter thin slices of 1/2 red onion and the white parts of 3 green onions over the pizza.

Transfer the pizza to the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway, until the crust is golden and cheese is bubbly and beginning to brown. Baking time will vary with oven and dough thickness—watch for a crisp crust and melted cheese.

Remove pizza from oven and transfer to a cutting board. Immediately drizzle about 2 tbsp Buffalo hot sauce over the top in a zig-zag pattern. Drizzle the reserved 1/4 cup buttermilk ranch over the pizza in thin lines or dots. Scatter the green parts of the sliced green onions, and if using, sprinkle 2 tbsp crumbled blue cheese and 1 tbsp chopped parsley or cilantro. Let rest 2–3 minutes, then slice into 6–8 pieces and serve hot.
