    Prep roll

    Slice the 6-inch sandwich roll horizontally, leaving a small hinge if desired. Lightly spread the inside cut faces with the softened butter.

    Toast roll: Heat a skillet or griddle over medium heat. Place the buttered cut-side-down on the skillet and toast until golden and slightly crisp, about 1–2 minutes. Remove and set aside.

    Assemble meats: On the bottom half of the toasted roll layer the Genoa salami (evenly distributed), then the pepperoni, then the smoked ham. Arrange so the meats overlap slightly for even bite and coverage.

    Add cheese and onion: Scatter the shredded pizza mozzarella evenly over the meats, then top with the thinly sliced red onion.

    Sauce: Spoon the signature pizza sauce over the cheese and onions, spreading to the edges but not soaking the bread. Use about 3 tablespoons for balanced flavor.

    Finish: Place the top half of the roll on the sandwich. If you prefer melted cheese, place the assembled half-sandwich under a broiler or in a 350°F (175°C) oven for 2–3 minutes until the cheese softens — watch carefully to avoid burning.

    Slice and serve: Slice the half-size sandwich on a bias if desired and plate alongside the Bolognese dipping sauce.

Bolognese dipping sauce (beefy)

    Heat oil: In a small saucepan or skillet over medium heat, add 1 teaspoon olive oil and warm until shimmering.

    Sweat aromatics: Add the finely diced onion, carrot, and celery. Cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Brown beef: Increase heat slightly to medium-high, add the ground beef, breaking it up with a spoon. Cook until no pink remains and small brown bits form, about 3–4 minutes.

    Build sauce: Stir in the tomato paste and cook 30–45 seconds to deepen flavor. Add the crushed tomatoes and beef stock; stir to combine.

    Season: Add dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using). Bring to a gentle simmer, then reduce heat to low.

    Reduce: Simmer gently uncovered for 8–10 minutes, stirring occasionally, until slightly thickened and flavorful. If sauce becomes too thick, add up to 1 tablespoon water or stock to loosen.

    Finish and serve: Stir in grated Parmesan, taste and adjust seasoning. Transfer to a small dipping bowl and serve warm alongside the sandwich for dipping.
