    Prepare the Broth

    In a saucepan, heat the vegetable broth over low heat. Keep it warm while you prepare the risotto.

    Sauté the Aromatics

    In a large skillet, add the olive oil over medium heat. Once hot, add the finely chopped shallots and minced garlic. Sauté for about 2-3 minutes until they become translucent.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet with shallots and garlic. Sauté for about 5-7 minutes until the mushrooms are tender and browned. Remove half of the mushrooms and set aside for garnishing.

    Toast the Rice

    Add the Arborio rice to the skillet with the remaining mushrooms. Stir well to coat the rice with oil and cook for about 2 minutes, until the rice is slightly translucent.

    Deglaze with Wine

    Pour in the white wine and stir continuously until the wine has mostly evaporated.

    Add the Broth Gradually

    Begin adding the warm vegetable broth, one ladleful at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle. This process should take about 18-20 minutes.

    Finish the Risotto

    Once the rice is al dente and creamy, stir in the grated Parmesan cheese. Season with salt and black pepper to taste.

    Serve

    Plate the risotto and garnish with the reserved sautéed mushrooms and fresh parsley. Serve immediately.
