    Prepare the Chicken

    Season the chicken thighs with salt and pepper on both sides.

    Chop the Vegetables

    Finely chop the garlic, onion, and bell pepper.

Cooking

    Sear the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for about 5-7 minutes on each side until golden brown. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped garlic, onion, and bell pepper. Sauté for about 3-4 minutes until they are soft and fragrant.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes, chicken broth, dried oregano, and the reserved chicken thighs. Bring to a simmer.

    Add Chickpeas

    Drain and rinse the canned chickpeas, then add them to the skillet. Simmer for an additional 10-15 minutes until the chicken is cooked through.
