Method

Preparation of Base

    Mixing the Base

    In a large mixing bowl, whisk together the whole milk, heavy cream, and granulated sugar until the sugar is fully dissolved.

    Adding Flavor

    Stir in the salt and vanilla extract to the mixture. For gelato, add the fresh fruit puree and mix well. For sorbet, combine the fresh fruit juice and water instead.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it is completely chilled.

Churning and Freezing

    Churning

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freezing

    Transfer the gelato or sorbet to an airtight container and freeze for at least 4 hours to firm up before serving.
