Polenta Fries

    Cook the Polenta

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt and gradually whisk in 1 cup of polenta. Reduce the heat to low and cook, stirring frequently, for about 20-25 minutes until thickened.

    Add Herbs and Cheese

    Once the polenta is cooked, stir in 2 tbsp of fresh chopped herbs and 1 cup of grated fresh Parmesan cheese until well combined. Pour the mixture into a greased baking dish, spreading it evenly. Let it cool completely.

    Cut and Bake Fries

    After the polenta has cooled and set, preheat the oven to 425°F (220°C). Cut the polenta into fry shapes. Place them on a baking sheet lined with parchment paper. Drizzle with 2 tbsp of olive oil and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Spicy Tomato Sauce

    Prepare the Sauce

    In a saucepan, heat 1 tbsp of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Tomatoes and Spices

    Stir in 1 cup of canned crushed tomatoes, 1 tsp of red pepper flakes, and season with salt and black pepper to taste. Let it simmer for about 15-20 minutes, then stir in 1 tbsp of chopped fresh basil before serving.

Garlic Parmesan Aioli

    Mix the Aioli

    In a bowl, combine 1 cup of mayonnaise, 2 minced garlic cloves, and 1/2 cup of grated fresh Parmesan cheese. Stir in 1 tbsp of lemon juice and season with salt and black pepper to taste.

    Chill Before Serving

    Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
