Method

Preparing the Pork Chop

    Marinate the Chops

    In a bowl, combine olive oil, salt, and black pepper. Rub this mixture over the Duroc pork chops evenly. Let it marinate for at least 30 minutes.

    Grill the Chops

    Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side or until they reach an internal temperature of 145°F (63°C). Remove from grill and let rest.

Making the House Tomato Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Cook the Sauce

    Add canned crushed tomatoes, chopped basil, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally. Adjust seasoning as needed.

Preparing the Red Pepper Corn Hash

    In a skillet, heat olive oil over medium heat. Add diced red onion and sauté for 2 minutes.

    Add diced red bell pepper and corn kernels. Season with salt and pepper. Cook for an additional 5-7 minutes until vegetables are tender.

Cooking the Broccolini

    In another skillet, heat olive oil over medium heat. Add broccolini, season with salt and pepper, and sauté for about 4-5 minutes until bright green and tender.

Making the Diane Sauce

    In a saucepan, combine Dijon mustard, Worcestershire sauce, and heavy cream. Stir well.

    Heat the mixture over medium heat, stirring continuously until it thickens slightly. Season with salt and black pepper.

Sautéing Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute before adding fresh spinach. Cook until wilted, about 3-4 minutes. Season with salt and pepper.
