    Using a vegetable peeler or a knife, carefully remove the zest from the orange, avoiding the bitter white pith. You only need the outer layer of the peel.

    In a small saucepan, combine 100 ml of water with 200 g of granulated sugar. Heat over medium heat until the sugar dissolves completely, stirring occasionally. Once the syrup is clear, remove from heat and let it cool.

Infusing the Liqueur

    Combine Ingredients

    In a large glass jar or bottle, combine the 750 ml of Cognac, the orange peel, 100 ml of freshly squeezed orange juice, and 1 tsp of vanilla extract.

    Once the simple syrup has cooled, pour it into the jar with the other ingredients. Ensure that everything is well mixed.

    Seal the jar or bottle tightly and let the mixture infuse at room temperature for at least 2 weeks. Shake gently every few days to help the flavors meld.

    After the infusion period, strain the mixture through a fine mesh sieve or cheesecloth to remove the orange peel and any solids. Pour the strained liqueur into a clean bottle.
