Filet Mignon

    Prepare the Steak

    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Season the Steak

    Generously season all sides of the filet mignon with salt and black pepper.

    Heat the Pan

    In a heavy skillet (preferably cast iron), heat olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Place the filet mignon in the hot skillet and sear for 4-5 minutes on one side without moving it.

    Add Aromatics

    After searing, flip the steak and add butter, garlic, and rosemary to the pan.

    Baste the Steak

    Tilt the pan slightly and use a spoon to baste the filet mignon with the melted butter and cooking juices for another 4-5 minutes.

    Check for Doneness

    Use a meat thermometer to check for doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C).

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks.

    Boil the Potatoes

    Place the chopped potatoes in a large pot and cover with cold water. Add 1 tsp of salt and bring to a boil.

    Cook the Potatoes

    Once boiling, reduce the heat to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain the Potatoes

    Drain the cooked potatoes in a colander and return them to the pot.

    Mash the Potatoes

    Add butter and heavy cream to the drained potatoes. Mash until smooth and creamy.

    Season the Potatoes

    Season the mashed potatoes with salt and black pepper to taste.
