Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

    Incorporate Butter

    Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, and mix until the dough starts to come together. Do not overmix.

    Chill the Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Fruit

    Wash, peel (if necessary), and slice the seasonal fruit into even pieces. Place them in a mixing bowl.

    Mix Filling Ingredients

    Add granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract to the fruit. Toss gently to combine.

Assembling and Baking

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer it to a tart pan, pressing it into the bottom and up the sides.

    Add the Filling

    Pour the fruit filling into the prepared crust, spreading it evenly.

    Prepare Egg Wash

    Beat the egg in a small bowl and brush it over the edges of the crust for a golden finish.

    Bake in the preheated oven for 35-40 minutes or until the crust is golden and the filling is bubbly.
