Prepare the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Once baked, remove from the oven and allow the cakes to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
Frosting

Prepare the Frosting
In a mixing bowl, cream together the softened unsalted butter and powdered sugar until light and fluffy.

Add Cream and Vanilla
Add the heavy cream and vanilla extract to the butter and sugar mixture. Beat until smooth and spreadable.
Assembly and Decoration

Frost the Cakes
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top and frost the top and sides of the entire cake.

Decorate
Top the cake with fresh berries and mint leaves for decoration. Serve immediately or refrigerate until ready to serve.
