Method

Prepare the Custard

    Heat the Cream

    In a saucepan over medium heat, combine the heavy cream and granulated sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream mixture. Heat until just simmering, stirring occasionally to dissolve the sugar. Remove from heat and let steep for 15 minutes.

    Mix the Egg Yolks

    In a mixing bowl, whisk together the egg yolks until they are pale and slightly thickened. Gradually add the warm cream mixture into the egg yolks, whisking constantly to temper the eggs.

    Strain the Mixture

    Strain the custard mixture through a fine mesh sieve into a clean bowl to remove the vanilla pod and any cooked egg bits.

Bake the Custard

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare the Ramekins

    Place five 6-ounce ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.

    Create a Water Bath

    Carefully pour hot water into the baking dish around the ramekins, making sure not to get any water into the custard. Fill the dish until the water reaches halfway up the sides of the ramekins.

    Bake

    Bake in the preheated oven for about 30-35 minutes, or until the custards are set but still slightly jiggly in the center. Remove from the oven and let cool in the water bath for 10 minutes, then remove ramekins and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar

    Prepare for Caramelizing

    Once the custards are chilled, sprinkle about 1/2 tablespoon of turbinado sugar evenly over the top of each custard.

    Heat the Sugar

    Using a kitchen torch, caramelize the sugar until it is melted and forms a golden crust. If you do not have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.

Serve with Fresh Berries

    Prepare the Berries

    While the sugar is caramelizing, wash and slice the strawberries if necessary. Arrange the raspberries, blueberries, and sliced strawberries on a serving platter.

    Serve

    Serve the crème brûlée immediately after caramelizing the sugar, alongside the fresh berries.
