Crab Cake Preparation

    Prepare the Mixture

    In a large bowl, combine fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and the egg. Mix well until all ingredients are combined.

    Add Breadcrumbs and Season

    Gently fold in the breadcrumbs, chopped green onions, salt, and black pepper to taste. Be careful not to break up the crab meat too much.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 30 minutes to help it set and make it easier to form into cakes.

    Form the Crab Cakes

    Once chilled, shape the mixture into small patties, about 2-3 inches in diameter.

    Cook the Crab Cakes

    In a large skillet, heat olive oil over medium heat. Add the crab cakes, cooking for 3-4 minutes on each side or until golden brown and crispy.

Remoulade Preparation

    Make the Remoulade

    In a small bowl, mix together mayonnaise, Dijon mustard, chopped capers, lemon juice, and hot sauce to taste. Adjust seasoning as desired.

Serving

    Plate and Garnish

    Serve the crab cakes hot, topped with a generous dollop of remoulade. Garnish with lemon wedges and a sprinkle of chopped parsley.
