Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler, stirring occasionally until smooth. Remove from heat and let cool slightly.

    Whisk Egg Yolks

    In a separate bowl, separate the egg yolks from the whites. Whisk the egg yolks with granulated sugar and vanilla extract until pale and creamy.

    Combine Chocolate and Yolks

    Once the chocolate has cooled slightly, fold it into the egg yolk mixture until well combined.

    Whip the Egg Whites

    In another clean bowl, whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses and refrigerate for at least 4 hours or overnight until set.

    In a bowl, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, then continue to whip until stiff peaks form.

    Once the mousse has set, top each serving with a generous dollop of whipped cream before serving.
