Add Tomatoes
Add the cherry tomatoes to the saucepan and cook for 5-7 minutes, stirring occasionally until the tomatoes start to soften.
- 3
Incorporate Port Wine
Pour in the port wine, add the chopped basil, salt, and black pepper. Bring the mixture to a gentle simmer and cook for an additional 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Finish Sauce
Remove from heat and let cool slightly before serving. You can blend it for a smoother texture if desired.
Parmesan Crisp
- 5
Preheat the Oven
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make Parmesan Crisps
In a bowl, combine the grated Parmesan cheese and cracked black pepper. Drop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- 7
Bake
Bake in the preheated oven for about 5-7 minutes or until the edges are golden and crispy. Keep an eye on them to avoid burning.

Cool and Serve
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
