Prepare the Beef

    Sauté the Beef

    In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add 1 pound of diced beef tenderloin and cook until browned, about 5-7 minutes. Stir occasionally.

    Season the Beef

    Add minced garlic, 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon Italian seasoning to the skillet. Cook for an additional 2-3 minutes until the garlic is fragrant. Remove from heat and set aside.

Prepare the Spinach and Cheese Mixture

    Cook the Spinach

    In a separate pot, bring water to a boil and add 4 cups of fresh spinach. Blanch for 1-2 minutes until wilted. Drain and cool in cold water. Squeeze out excess water and chop finely.

    Mix the Cheese

    In a large bowl, combine 15 ounces of ricotta cheese, chopped spinach, and half of the cup of grated Parmesan cheese. Mix well until fully incorporated.

Assemble the Lasagna

    Layer the Ingredients

    Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of house tomato sauce on the bottom. Place 4 lasagna noodles on top, followed by half of the spinach and cheese mixture, half of the sautéed beef, and 1 cup of mozzarella cheese. Repeat the layers, finishing with a layer of noodles, tomato sauce, and the remaining mozzarella cheese on top.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and sprinkle the remaining Parmesan cheese on top. Bake uncovered for an additional 15-20 minutes until the cheese is bubbly and golden.

    Let it Rest

    Once out of the oven, let the lasagna rest for about 10 minutes before slicing. This will help the layers set.
