    Prepare the Ingredients

    Chop the onion, sundried tomatoes, and mushrooms. Trim the ends of the haricot vert and slice the Brussels sprouts thinly. Cut the potatoes into small cubes.

    Roast the Potatoes

    Preheat your oven to 200°C (400°F). Toss the cubed potatoes with duck fat, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes until golden brown and crispy.

Cooking Vegetables

    Sauté the Vegetables

    In a large skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside, keeping the drippings. In the same skillet, add onions and cook until caramelized. Add mushrooms, Brussels sprouts, haricot vert, and sundried tomatoes. Sauté for about 5-7 minutes until vegetables are tender. Stir in the crumbled bacon.

Cooking Beef Tenderloin

    Cook the Beef Tenderloin

    Season the beef tenderloin steaks with salt and pepper. In the same skillet, over medium-high heat, sear each side of the steak for about 3-4 minutes for medium-rare. Remove from heat and let rest for a few minutes.

Serving

    Plate the Dish

    On each plate, serve a portion of Zelli rigatoni, topped with the sautéed vegetables and bacon. Place a beef tenderloin steak alongside and finish with a dollop of compound butter on top. Serve the roasted potatoes on the side.
