Cooking the Patties

    Prepare the Beef

    Form the ground beef into two equal balls, about 4 ounces each. Do not overwork the meat.

    Smash the Patties

    Heat a cast-iron skillet or griddle over medium-high heat. Place the beef balls on the skillet and immediately smash them down with a spatula until they are about 1/2 inch thick. Season with salt and pepper.

    Cook the Patties

    Cook for about 2-3 minutes until a crust forms. Flip the patties, place a slice of white cheddar on each patty, and cook for another 1-2 minutes until the cheese is melted and the burger is cooked to your desired doneness.

Assembling the Burger

    Prepare the Buns

    While the patties are cooking, toast the brioche buns on the skillet until golden brown.

    Build the Burger

    Spread fancy sauce on the bottom bun. Layer with lettuce, sliced tomato, and pickles. Place the cooked patties on top and finish with the top bun.
