Preparation

    Prepare the Tuna

    Lightly sear the Ahi tuna steak on all sides in a hot pan for about 30 seconds per side, then remove from heat and let cool. Once cooled, slice it thinly against the grain.

    Make Maple Lime Ponzu

    In a small bowl, whisk together the soy sauce, maple syrup, lime juice, and rice vinegar until combined. Set aside.

    Prepare Spicy Citrus Garlic Sauce

    Mince the garlic cloves and mix them with chili paste, orange juice, lime juice, and olive oil in a bowl. Stir until well combined.

    Cook Asparagus

    Blanch the asparagus spears in boiling water for about 2 minutes, then transfer them to an ice bath to stop cooking. Drain and pat dry.

    Prepare the Salad

    In a bowl, combine blanched asparagus, sesame oil, sesame seeds, and salt. Toss to coat evenly.

Assembly

    Plate the Dish

    Arrange the sliced tuna on a plate, drizzle with maple lime ponzu, and add the spicy citrus garlic sauce on top. Serve with puffed rice and the asparagus sesame salad on the side.
