    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Add the Tomatoes

    Add the diced tomatoes and tomato paste to the skillet. Stir in paprika, cumin, salt, and black pepper. Bring to a simmer and cook for about 10 minutes, stirring occasionally, until the sauce thickens.

Cooking Eggs

    Poach the Eggs

    Using a spoon, create small wells in the sauce and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny.

Serving

    Finish and Serve

    Sprinkle crumbled feta cheese and chopped cilantro on top. Serve hot with toasted sourdough bread on the side.
