Preparing the Fries

Prep the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thin fries.

Season the Fries
In a large bowl, toss the cut fries with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.

Add Parmesan and Truffle Oil
Once the fries are done, remove from the oven and immediately sprinkle with Parmesan cheese and drizzle with truffle oil. Toss to combine.
Making the Lemon Aioli

Mix the Aioli
In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth.

Serve the hot Parmesan truffle fries with the lemon aioli on the side for dipping.
