Infuse the Gin
Start by infusing the Hendrick’s gin with Earl Grey tea. Steep 1 cup of Earl Grey tea in 750 ml of gin for about 4 hours. Strain and store in a clean bottle.

Shake the Ingredients
In a cocktail shaker, combine the infused Hendrick's gin, fresh lemon juice, egg white, Earl Grey syrup, and lavender bitters.

Dry Shake
Perform a 'dry shake' (shaking without ice) for about 15 seconds to emulsify the egg white and create foam.

Shake with Ice
Add ice to the shaker and shake vigorously for an additional 15 seconds.

Strain and Serve
Strain the mixture into a chilled martini glass. Optionally, use a fine mesh strainer for a smoother texture.

Garnish
Garnish with a twist of lemon peel on top.
