    Make the Mornay Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in milk, stirring constantly until thickened. Stir in roasted jalapeños, nutmeg, salt, and pepper. Remove from heat and add gruyère cheese, stirring until melted.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Assemble the Croque Madame

    Toast the sourdough bread slices. Layer each slice with smoked ham, then pour a generous amount of Mornay sauce over the top. Place another slice of bread on top to create a sandwich. Repeat for all sandwiches.

    Cooking the Sandwiches

    Heat a non-stick skillet over medium heat. Cook the sandwiches for 3-4 minutes on each side until golden brown and crispy. Remove from heat and top each sandwich with a poached egg.

    Serve with Greens

    Serve the croque madame with a side of market greens lightly dressed with olive oil, salt, and pepper.
