Main Sauce Ingredients
Prepare Roasted Garlic
1. Roast Garlic
Preheat oven to 400°F (200°C). Place unpeeled garlic cloves on a baking sheet and roast for 15-20 minutes until soft and golden. Let cool, then peel.
Cook Sauce
2. Sauté Tomatoes
Heat olive oil in a saucepan over medium heat. Add chopped tomatoes and cook for 10 minutes, stirring occasionally.
3. Add Seasonings
Stir in smoked paprika, sweet paprika, cayenne pepper, and red chili flakes. Cook for 2 minutes to release flavors.
4. Add Roasted Garlic
Add peeled roasted garlic cloves to the saucepan and stir to combine.
5. Simmer Sauce
Add white wine vinegar, sugar, salt, and black pepper. Simmer the sauce for 5 more minutes.
Blend and Finish
6. Blend Sauce
Remove sauce from heat and allow to cool slightly. Transfer to a blender or use an immersion blender to puree until smooth.
7. Adjust Seasoning
Taste and adjust salt or spice as needed. Let cool completely before storing.
