Pork Preparation

    Marinate the Pork

    In a large bowl, combine the minced garlic, fresh orange juice, fresh lime juice, olive oil, chopped cilantro, cumin powder, oregano, salt, and black pepper. Mix well to form a marinade.

    Add Pork to Marinade

    Place the pork shoulder into the marinade, ensuring it is completely covered. Cover the bowl with plastic wrap and refrigerate for at least 8 hours, preferably overnight.

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Slow Roast the Pork

    Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade. Cover the pork with aluminum foil and roast in the preheated oven for 4-5 hours, or until the pork is tender and easily pulled apart with a fork.

Onion Preparation

    Prepare Onions

    While the pork is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and sprinkle with salt.

    Grill the Onions

    Cook the onions, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Set aside until the pork is ready.

Serving

    Serve the Dish

    Once the pork is done roasting, remove it from the oven and let it rest for about 15 minutes. Shred the pork with two forks and serve it topped with the grilled onions.
