Method
Preparing the Tostones
Peel and Slice the Plantains
Using a knife, carefully peel the green plantains. Cut them into 1-inch thick slices.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Plantains
Once the oil is hot, carefully add the plantain slices in batches. Fry them for about 3-4 minutes or until they are lightly golden. Remove them from the oil and drain on paper towels.
Flatten the Slices
Using the bottom of a glass or a tostonera (a plantain press), flatten each fried plantain slice to about ½ inch thick.
Second Fry
Return the flattened plantains to the hot oil and fry for another 2-3 minutes until they are golden and crispy. Remove and drain again on paper towels. Sprinkle with salt.
Making the Garlic Sauce
Prepare the Garlic
Mince the garlic cloves finely.
Combine Ingredients
In a small bowl, whisk together the minced garlic, olive oil, lemon juice, and salt until well combined.
Serving
Serve the Tostones
Arrange the crispy tostones on a serving plate and drizzle with garlic sauce. Serve immediately for the best crunch.
