Marinating the Chicken

    Prepare the Marinade

    In a medium bowl, combine the coconut milk, lime juice, minced garlic, cumin, paprika, salt, black pepper, and olive oil. Whisk together until all ingredients are well blended.

    Marinate the Chicken

    Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F/200°C).

    Grill the Chicken

    Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. Serve with your favorite sides.
