Method
Preparation
- 1
Peel the Plantains
Using a sharp knife, cut off both ends of the plantains and make a shallow slit along the skin, taking care not to cut into the flesh. Carefully peel off the skin to reveal the ripe plantain.
- 2
Slice the Plantains
Cut the peeled plantains into diagonal slices about 1 inch thick. This will help them cook evenly and create a larger surface area for caramelization.
Cooking
- 3
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers. You can test if the oil is hot enough by dropping a small piece of plantain into it; it should sizzle immediately.
- 4
Fry the Plantains
Carefully add the sliced plantains to the hot oil in a single layer. Fry them for about 3-4 minutes on each side until they turn golden brown and crispy.
- 5
Drain and Season
Once golden and crispy, use a slotted spoon to remove the plantains from the oil and place them on a plate lined with paper towels to drain excess oil. While they are hot, sprinkle with salt to taste.
Serving
- 6
Garnish and Serve
Transfer the fried plantains to a serving platter. If desired, top with sour cream, chopped cilantro, and crumbled cheese for extra flavor. Serve warm.
