Prepare Jicama
Peel the jicama and cut it into thin matchsticks or julienne strips. Measure out 2 cups and place in a large mixing bowl.

Slice Carrot
Peel the carrot and grate it using a box grater or food processor. Add the grated carrot to the mixing bowl with jicama.

Dice Bell Pepper
Remove the seeds and stem from the bell pepper, then chop it into small pieces. Add 1 cup of diced bell pepper to the mixing bowl.
Making the Dressing

Combine Dressing Ingredients
In a small bowl, whisk together 3 tablespoons of lime juice, 2 tablespoons of olive oil, 1 tablespoon of honey, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

If desired, chop the cilantro and add 0.5 cup to the dressing mixture.
Combining Slaw

Toss Slaw and Dressing
Pour the dressing over the vegetable mixture in the large bowl. Toss everything together until the vegetables are evenly coated with the dressing.
