Preparation of Vegetables

    Prepare Jicama

    Peel the jicama and cut it into thin matchsticks or julienne strips. Measure out 2 cups and place in a large mixing bowl.

    Slice Carrot

    Peel the carrot and grate it using a box grater or food processor. Add the grated carrot to the mixing bowl with jicama.

    Chop Cabbage

    Shred the red cabbage finely and measure out 2 cups. Add it to the bowl with jicama and carrot.

    Dice Bell Pepper

    Remove the seeds and stem from the bell pepper, then chop it into small pieces. Add 1 cup of diced bell pepper to the mixing bowl.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together 3 tablespoons of lime juice, 2 tablespoons of olive oil, 1 tablespoon of honey, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

    If desired, chop the cilantro and add 0.5 cup to the dressing mixture.

Combining Slaw
