Method

Preparation

1

Prepare the Marinade

In a blender or food processor, combine the garlic cloves, fresh lime juice, fresh orange juice, olive oil, oregano, cumin, salt, and black pepper. Blend until smooth.

2

Marinate the Pork

Place the pork shoulder in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Roasting

3

Preheat the Oven

Preheat your oven to 300°F (150°C).

4

Prepare the Pork for Roasting

Remove the pork from the marinade and let it come to room temperature. Discard the marinade.

5

Roast the Pork

Place the pork shoulder on a roasting rack in a roasting pan. Roast in the preheated oven for approximately 4 to 5 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

6

Rest the Meat

Once roasted, remove the pork from the oven and let it rest for at least 20 minutes before slicing.

7

Serve

Slice the pork and serve it with your favorite sides, drizzling any pan juices over the top for added flavor.
