Add the pork shoulder to the marinade, ensuring it is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for best flavor.

In a separate bowl, combine the thinly sliced red onions, lime juice, salt, olive oil, and oregano. Toss to coat the onions well.

Let the onions marinate for at least 30 minutes at room temperature to soften their flavor and enhance the taste.

Grilling the Pork

Preheat your grill to medium-high heat.
