Prepare the Plantains
Peel the ripe plantains by making a shallow cut along the length of each plantain and removing the skin. Slice the plantains diagonally into 1-inch thick pieces.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until it is hot but not smoking.

Fry the Plantains
Carefully add the sliced plantains to the hot oil in a single layer. Fry for about 2-3 minutes on each side or until they are golden brown.

Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
Dipping Sauce

Combine Ingredients
In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lime juice. Mix well until all ingredients are thoroughly blended.

Serve
Transfer the dipping sauce to a serving bowl. Serve alongside the fried plantains for dipping.
