Method

Pork Marinade Preparation

    Prepare the Marinade

    In a blender or food processor, combine garlic, oregano, cumin, orange juice, lime juice, olive oil, salt, and black pepper. Blend until smooth.

    Marinate the Pork

    Place the pork shoulder in a large resealable bag or a bowl. Pour the marinade over the pork, ensuring it is well coated. Seal and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Roast the Pork

    Preheat the oven to 325°F (165°C). Place the marinated pork in a roasting pan and cover with foil. Roast for 3-4 hours, or until the internal temperature reaches 190°F (88°C). Remove from oven and let it rest for 20 minutes.

    Shred the Pork

    After resting, shred the pork using two forks. Set aside.

Mojo Sauce Preparation

    Prepare the Mojo Sauce

    In a blender, combine garlic, cilantro, orange juice, lime juice, olive oil, salt, and black pepper. Blend until smooth. Set aside.

Sandwich Assembly

    Assemble the Sandwich

    Slice the Cuban bread lengthwise. Spread mayonnaise on both sides. Layer with shredded pork, ham, Swiss cheese, and pickles. Drizzle with mojo sauce.

    Grill the Sandwich

    Heat a skillet or panini press over medium heat. Place the sandwich in the skillet, pressing down with a weight if possible. Grill for about 3-4 minutes on each side, until the bread is crispy and the cheese is melted.
