Pretzel Bites

Flavorful smoked brisket served with your choice of sides.

Brisket

In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. Then, add the salt and gradually mix in the flour until a dough forms.

Make the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour or until doubled in size.

Knead the Dough

Preheat your oven to 450°F (230°C). Once dough has risen, punch it down and divide it into small pieces (about 1 inch each). Roll each piece into a ball and set aside.

Shape the Pretzel Bites

In a large pot, bring 10 cups of water to a boil and add the baking soda. Once boiling, drop the pretzel bites into the water for about 30 seconds, then remove and place them on a greased baking sheet.

Prepare the Baking Soda Bath

Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes until golden brown.

In a small bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

Prepare the Rub

Rub the olive oil over the brisket and then coat it evenly with the spice mixture. Make sure to cover all sides.

Season the Brisket

Wrap the seasoned brisket in plastic wrap and refrigerate for at least 8 hours, preferably overnight.

Marinate

Preheat the Smoker

Place the brisket in the smoker and smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

Smoke the Brisket

Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Rest the Brisket

While the brisket is resting, mix the beef broth and apple cider vinegar in a small saucepan over medium heat until warmed.

Prepare the Juices

Slice the brisket against the grain and serve with the warmed juices on the side.
