Lunch Buffet

Sunday Brunch Buffet

In a large bowl, combine mixed greens, sliced cherry tomatoes, diced cucumber, thinly sliced red onion, and crumbled feta cheese. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. Toss to combine.

Prepare the Salad

In a medium saucepan, bring 4 cups of water to a boil. Add quinoa and a pinch of salt. Reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.

Cook Quinoa

Preheat a grill or grill pan over medium heat. Season chicken breasts with garlic powder, paprika, and salt. Grill for 6-7 minutes on each side until fully cooked.

Grill Chicken

In a large skillet, heat olive oil over medium-high heat. Add vegetable medley and sauté for 5-7 minutes until tender.

Prepare Vegetable Medley

Arrange the salad, grilled chicken, quinoa, and vegetable medley on a buffet table. Serve chocolate brownies with a scoop of vanilla ice cream for dessert.

In a large bowl, whisk together the eggs, milk, salt, and pepper. Heat a non-stick skillet over medium heat, add a bit of butter, and pour in the egg mixture. Stir gently until the eggs are set but still soft. Stir in the cheddar cheese and chopped chives just before serving.

In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and let drain on paper towels.

In the same skillet, add a small amount of butter and toast slices of bread until golden brown on both sides.

Wash and slice the fresh fruit as desired. Arrange on a platter.

Prepare the Fruit

Set up the buffet table with scrambled eggs, crispy bacon, toasted bread, fresh fruit, and orange juice. Let guests serve themselves.
