Method
Preparation
- 1
Chill glass and beer
If the Summit EPA is not already cold, place bottle in refrigerator for at least 30 minutes. Optionally chill a pint glass or tulip glass in the freezer for 10β15 minutes before serving.
- 2
Prepare citrus and syrup
Cut the lemon and orange into quarters. Measure out 1/4 tablespoon simple syrup and place it where it will be ready to use.
Build the Drink
- 3
Add citrus and syrup to glass
If using a chilled glass, optionally add ice. Squeeze the quarter lemon and quarter orange over the glass to release juice (about 1/2 to 3/4 teaspoon total of mixed juice). Drop the squeezed fruit pieces into the glass if you like a more fragrant finish. Add 1/4 tablespoon simple syrup to the glass.
- 4
Add bitters
Add two dashes of Angostura bitters into the glass on top of the citrus and syrup. The bitters add aromatic depth and balance the malt and hop character of the beer.
- 5
Top with beer
Slowly pour 1 serving of chilled Summit EPA into the glass at a 45-degree angle to preserve carbonation and form a modest head. Pour gently to mix the citrus, syrup, and bitters into the beer without excessive foaming.
- 6
Taste and adjust
Taste the beer. If you prefer more sweetness, add an additional 1/8β1/4 tablespoon simple syrup. If citrus is too faint, add a small squeeze of additional lemon (about 1/8 lemon). Stir gently once with a bar spoon to incorporate.
Garnish & Serve
- 7
Garnish with a lemon wheel on the rim and an optional orange twist floated on top. Serve immediately while the beer is effervescent.
