    Sanitize

    Thoroughly sanitize fermenter, airlock, spoon, and any equipment that will contact the seltzer using a no-rinse sanitizer (follow manufacturer dilution).

    Dissolve sugars

    Heat 1.5 liters of the filtered water to about 65–70°C (not boiling). Dissolve the 1.0 kg sugar completely, stirring until clear. This reduces the risk of scorching and helps sanitize the wort.

    Top up and cool

    Pour the hot sugar solution into the sanitized fermenter. Add the remaining 2.3 liters of cold filtered water to bring total volume to about 3.8 L and help cool the liquid. Cool the mixture to 20–24°C (68–75°F) as quickly as possible (ice bath or immersion chiller).

    Adjust acidity

    Dissolve the acid blend (10 g) into a small amount of water and add to the fermenter. Stir gently to incorporate. This helps create the crisp, tart profile typical of seltzer and gives yeast a better environment.

    Add yeast nutrient & fining (optional)

    Add the yeast nutrient (2 tsp) and, if using, the whirlfloc/fining agent. Stir gently to incorporate.

    Pitch yeast

    If using dry champagne yeast, rehydrate per package instructions (usually in 30–40 ml of warm water ~35–40°C with a pinch of sugar) for 10 minutes, then add to the fermenter. Alternatively, sprinkle directly on top if manufacturer's instructions allow. Ensure temperature is 20–24°C before pitching.

    Ferment

    Seal fermenter with sanitized airlock. Ferment at a stable 18–22°C (65–72°F). Primary fermentation for a simple sugar wash typically finishes in 3–7 days. You should see vigorous activity for 24–72 hours then slow. Measure specific gravity if you have a hydrometer; target final gravity is ~1.000–1.002 (dry).

    Clarify (optional)

    Once fermentation is complete and gravity is stable for 48 hours, you may rack to a secondary or cold crash at 1–4°C for 24–72 hours to help clarify. Add fining agent earlier if desired to speed clearing.

Flavor & Sweetness (Optional, post-fermentation)

    Stabilize before back-sweetening (optional)

    If you plan to back-sweeten with simple syrup, dissolve 0.5 tablet of campden in a small amount of water and stir into the cleared seltzer, then add potassium sorbate (1 tsp) to inhibit yeast restart. Wait 24 hours and check for any renewed fermentation activity.

    Add flavor

    Add 15 ml natural fruit essence or extract to the batch and gently stir. Taste and adjust; add additional small increments (5 ml) until desired intensity is reached. If you prefer real fruit purée, use pasteurized purée and account for extra sugars (sanitize and stabilize first to prevent re-fermentation).

    Back-sweeten (optional)

    If you want residual sweetness, add simple syrup gradually (start with 30 ml), stir, and sample. Continue until desired sweetness is achieved. If you did not stabilize, avoid adding fermentable sweetness or risk re-fermentation.

Carbonation & Packaging

    Choose carbonation method

    Decide whether to force-carbonate in a keg with CO2 or to bottle-condition. Force-carbonation is recommended for a crisp, controllable result; bottle-conditioning with priming sugar risks cloudiness and yeast flavors.

    Sanitize packaging

    Sanitize bottles, kegs, caps, and tubing with the prepared sanitizer solution (200 ml mixed per manufacturer instructions). Rinse if required by sanitizer used.

    Bottle-conditioning (if chosen)

    If bottle-conditioning, dissolve 5 g dextrose in a small amount of boiling water, cool, and add evenly to the batch before bottling. Fill sanitized bottles, cap, and store at 20–22°C for 7–14 days to carbonate. Chill before serving to halt yeast activity.

    Transfer the finished seltzer into a sanitized keg, seal, and chill to 1–4°C. Connect CO2 and set to 30 psi for 24–48 hours (or use frequent bursts and shaking) until desired carbonation is reached (approx. 2.5–3 volumes CO2 for a crisp seltzer). Reduce serving pressure before dispensing.

    Serve

    Serve cold in a chilled glass over ice with a garnish if desired (lime wedge, fresh berries). If flavored, gently invert keg or bottle to re-distribute aroma before serving.
