Prepare glass and muddle
Place the lime wedge and granulated sugar (or 1 tsp simple syrup) into a highball or Collins glass. Add the fresh mint leaves on top. Using a muddler or the back of a spoon, gently press and twist 6–8 times—just enough to release the mint oils and lime juice but not shred the mint.

Add prickly pear and lime juice
Pour 2 tablespoons Earl Giles prickly pear elixir and 1 ounce fresh lime juice into the glass. Stir gently to combine the syrup with the muddled mixture so the sugar dissolves and the flavors marry.

Add ice and soda
Fill the glass with crushed ice or cubes (about 1 cup). Top with 4 ounces chilled soda water. Stir once or twice gently to lift the mint and distribute the prickly pear mixture evenly through the drink.

Garnish and finish
Slap the extra mint sprig between your palms to wake the oils and place it on top as a garnish along with a lime wheel or wedge on the rim. Serve immediately with a straw or stirring spoon.

Optional adjustments
If you prefer sweeter, add an additional 1 teaspoon simple syrup. For more tartness, add 1/4–1/2 ounce extra lime juice. To make a pitcher, scale ingredients by the number of servings and add soda just before serving to preserve fizz.
