Poached Pears

Prepare pears
Peel the pears, leaving the stems intact. Trim a small slice from the base so pears sit upright. If pears are very large, halve vertically and core, otherwise leave whole and core from the bottom with a melon baller if desired.

Make poaching liquid
In a wide saucepan or shallow pot large enough to hold pears in a single layer, combine water and 1 cup granulated sugar. Add whole cloves, peppercorns, cinnamon stick, the split vanilla bean (scrape seeds into the pot and add pod) or 1 tsp vanilla extract, and the zest of the lemon. Cut the lemon in half and squeeze in its juice. Bring the mixture to a gentle simmer over medium heat, stirring to dissolve sugar.

Poach pears
Lower pears into the simmering liquid. The liquid should reach about three-quarters up the pears; add a little extra water if needed. Reduce heat to maintain a bare simmer (small bubbles) — do not boil vigorously or pears will toughen. Poach gently until pears are tender when pierced with a knife or skewer, about 15–25 minutes depending on size and ripeness. Turn pears occasionally for even coloring.

Cool in syrup
When tender, remove pot from heat and let pears cool in the poaching liquid to room temperature (about 30–45 minutes) so they absorb more flavor and color. For deeper flavor, transfer pears and liquid to a covered container and refrigerate at least 4 hours or overnight.

Reduce poaching liquid (optional)
After removing pears, strain the liquid into a small saucepan, discard solids. Bring to a simmer and reduce until syrupy, about 8–12 minutes, stirring occasionally. Taste and adjust sweetness. Cool slightly before spooning over pears.
Caramel Sauce (optional)

Make caramel: In a small, dry skillet or saucepan, heat 3 tbs granulated sugar over medium heat, swirling occasionally until it melts and turns amber. Do not stir with a spoon; lift and swirl the pan as needed. When amber, remove from heat and carefully add butter (it will bubble). Stir until combined, then gradually whisk in heavy cream until smooth. Return to low heat briefly if needed to combine. Stir in sea salt, taste and adjust. Let cool slightly before drizzling.

Plate pears: Place one pear per plate upright. Spoon a little reduced poaching syrup and/or caramel sauce over each pear.

Serve: Serve immediately if using ice cream, or chilled if served with yogurt/mascarpone. Leftover poached pears keep in their syrup in the refrigerator up to 4 days.
