Ancho Chile Syrup

    Prep chiles

    Wipe the ancho pods with a dry towel. Remove stems and shake out seeds. Tear the pods into large pieces (about 1–2 inches) to expose more surface area.

    Toast (optional)

    Warm a dry skillet over medium heat and toast the ancho pieces for 20–30 seconds per side until fragrant, taking care not to scorch; this deepens the flavor.

    Simmer syrup

    In a small saucepan combine 1 cup water, 1 cup granulated sugar, 1 tablespoon light brown sugar, and the toasted ancho pieces. Add the lime and orange zest. Bring to a gentle simmer over medium heat, stirring to dissolve sugars.

    Steep

    Reduce heat to low and let the mixture simmer very gently for 8–10 minutes. Remove from heat and allow the chiles to steep in the syrup for 30 minutes (or up to 1 hour for more pronounced chile flavor).

    Strain & cool

    Strain the syrup through a fine-mesh sieve or cheesecloth into a jar, pressing on solids to extract flavor. Discard solids and let the syrup cool to room temperature. Refrigerate; syrup will keep 2–3 weeks.

Cocktail

    Prepare glass

    On a small plate mix 1 tablespoon coarse kosher or smoked sea salt with 1 teaspoon ancho chile powder. Rub a lime wedge around the rim of a rocks or coupe glass, then dip the rim into the salt-chile mixture to coat. Fill the glass with fresh ice if serving on the rocks.

    Combine ingredients

    In a cocktail shaker add 6 tablespoons (3 oz) reposado tequila, 2 tablespoons (1 oz) fresh lime juice, 1 tablespoon Cointreau, 1 tablespoon ancho chile syrup, and 1 teaspoon agave nectar if you prefer a touch more sweetness. Add about 1 cup of ice to the shaker.

    Shake

    Shake vigorously for 12–15 seconds until the shaker is cold and well-chilled. This both chills and dilutes the drink to balance flavors.

    Strain & serve

    Double-strain the cocktail (using a Hawthorne and a fine mesh strainer if available) into the prepared glass over fresh ice (or neat into a chilled coupe).

Garnish & Finish

    Garnish the margarita with a lime wheel or wedge and an optional orange twist. If you like extra chile aroma, grate a tiny pinch of ancho powder over the top or float a thin slice of toasted ancho (unsalted) as a visual accent.

    Taste and adjust: if the cocktail is too tart, add 1/4 teaspoon more agave or simple syrup; if too sweet, add a small squeeze more lime. Serve immediately.
