Bagel & Base

Method

Bagel & Base

1

Toast bagels

Slice the bagels in half horizontally. Toast the cut sides in a toaster or under a broiler until golden and lightly crisp, about 2–4 minutes depending on your appliance.

2

While still warm, spread 3 tablespoons of softened cream cheese evenly on each toasted bagel half (total 6 tbsp). Set on a work surface with the spread facing up.

Produce

3

Prepare the cucumber: thinly slice 1/2 a cucumber into rounds (about 10–14 slices depending on cucumber size). Pat slices dry with a paper towel to remove excess moisture.

4

Prepare the avocado: halve, pit, and peel the avocado. Thinly slice or fan the avocado into 6–8 slices. Immediately toss the slices gently with 1 tablespoon fresh lemon juice to prevent browning and to add brightness. Set aside.

Lemon Pepper Sauce

5

Make the lemon pepper sauce: in a small bowl combine 3 tbsp mayonnaise and 2 tbsp Greek yogurt. Add 1 tbsp fresh lemon juice and 1/2 tsp lemon zest, 1 tsp coarsely ground black pepper, 1/4 tsp garlic powder, and 1/4 tsp fine sea salt.

6

Whisk the mixture until smooth, then drizzle in 1 tsp extra-virgin olive oil while whisking to emulsify. Taste and adjust seasoning: add more lemon juice for brightness, more pepper for heat, or a pinch more salt if needed. The sauce should be creamy and pourable but not too thin.

Assembly & Garnish

7

Dress cucumber and avocado: in a small bowl, toss the cucumber slices with a light spoonful (about 1 tsp) of the lemon pepper sauce to coat. Reserve the remaining sauce for finishing.

8

Arrange toppings: on each cream cheese–spread bagel half, layer cucumber slices evenly (about 5–7 per half) then place avocado slices on top. If you prefer, fan the avocado for a nicer presentation.

9

Finish with sauce and garnish: drizzle about 1/2–1 tbsp of the remaining lemon pepper sauce over each assembled bagel half. Sprinkle 1/2 tsp chopped dill or chives across both bagels (divide evenly) and, if using, a light pinch of red pepper flakes for a touch of heat.

10

Serve immediately: enjoy while the bagel is still slightly warm so the texture contrasts with the cool cream cheese and crisp cucumber.
